The Farm Journey

The spark didn’t come from a business plan or a strategic vision. It started quietly, way back in 2003, when I toured my tío’s farm in San Germán, Puerto Rico.

1. The Coffee Plant & Harvesting

The journey starts on high-altitude coffee farms located in regions known as the “Coffee Belt.” Here, farmers grow coffee plants that take nearly 3–4 years to bear fruit.  These fruits, called coffee cherries, are handpicked when they reach peak ripeness. Selecting only the red, ripe cherries ensures the best flavor and quality.

2. Processing the Cherries

Once harvested, the cherries must be processed quickly to prevent spoilage. There are two main methods:
Washed Process: Cherries are pulped, fermented, and washed—resulting in clean, bright flavors.
Natural Process: Cherries are sun-dried with the fruit intact, giving the coffee a sweeter and fruitier profile.
Each method brings out different flavor notes, making this step crucial in shaping the coffee’s personality.

3. Drying the Beans
